Cooking for Me!!

I was at the gym this morning and one of the trainers came up to me, grabbed me by the shoulders and said..."Amity, about your blog... a block of cream cheese?"

She's right.  About 5 weeks ago, at the suggestion of my naturopath I am supposed to have eliminated dairy from my diet.  That's so hard!  I love dairy!  I love any kind of cheese, yogurt, milk... Dairy has been the foundation of my breakfasts and snacks for years, regardless of the diet I was on.  Let me make excuses.  I have not eliminated dairy from my diet entirely.  I have been unable to make the commitment.  But I have improved.  Other than a sprinkle of cheese or milk or cream here and there, I don't have much any more.  No yogurt for breakfast, no string cheese as snacks, no real milk in my protein shakes.  I have some work to do still though.  And the amount of dairy in dinner last night proved it to me as I paid the price with an upset tummy this morning.

So what do I eat?  I am working on becoming gluten, grain and dairy free.  A lot of the recipes I cook for babe are filled with this stuff.  Usually what I do is plate up the whole deal for him.  Meat, potatoes, veg etc, and serve myself either the same but significantly smaller portion, or I don't plate myself the grain portion of the meal.  This makes me feel like I'm not entirely deprived and it's more sustainable for me.

While I sent babe to work today with leftovers from last night for lunch, this is what my typical lunch looks like

Buffalo Chicken Salad




This salad can't be easier to throw together.  I usually have all the ingredients on hand for lunches throughout the week.


Ingredients:

1-2 cups romaine lettuce leaves, torn
1 stalk of celery chopped
1/2 carrot, shredded
3-4 oz shredded chicken, tossed in buffalo sauce
Ranch dressing**

Method:
  1. Throw it on a plate or bowl and dig in!

**This ranch dressing I found from Danielle Walkers "Against All Grain" cookbooks.  She is fantastic.  I have found her recipes for grain free cooking to be inspiring and I can't wait to share!

Ranch Dressing

Ingredients:

1 C Mayonnaise ( I am working up to making my own)
1/2 C full fat coconut milk
2 cloves garlic, chopped into paste
3 tbsp parsley, chopped
2 tbsp chives, chopped
2 tbsp dill, chopped
1 tbsp lemon juice
1/2 tsp onion powder
1/2 tsp sea salt

Method:
  1. Whisk all ingredients in a bowl and store in refrigerator.
